Recipe: Leek, Mushroom and Bacon Pizza


As I mentioned previously, I am a big fan of pizzas. As mentioned in my party post last week, I made a leek, mushroom and bacon pizza recently for our housewarming party. A couple of you asked for me to post the recipe, so here it is!


1 ball pizza dough (I got mine from Whole Foods)
Cornmeal (If you have a pizza stone)
Flour
Truffle Oil
Shredded Mozzarella Cheese
Crumbled Blue Cheese
1/2 Package Bacon
2 Large Leeks
4oz Mushrooms

Salt and Pepper


Step 1
Allow dough to sit out a few hours so it can defrost a bit.



Step 2
Cook bacon to desired crispness then chop. 


Step 3
Rinse and chop mushrooms. Put aside.



Step 4
Trim and clean leeks. For those of you whom this is the first time cooking with leeks, you trim off the rootlets and the dark green parts. There should only be a hint of green when you are done. After you have trimmed the leeks, slice them lengthwise, then slice them in 1/4 inch thick.



Step 5
Saute the mushrooms and leeks separately in butter, salt and pepper for about 10-15 minutes. Put aside.





Step 6
Cover a large cutting board/surface with flour. Use your hands and rolling pin to flatten out the dough. 

Step 7
Spread cornmeal out on pizza stone. Transfer flattened pizza dough to stone. 


Step 8
Brush dough lightly with truffle oil. Then layer on leeks, mushrooms and bacon. Cover with shredded mozzarella cheese.

Step 9
Place in the oven on the bottom rack for 15 minutes at 300 degrees or until cheese starts to brown lightly. Take pizza out and sprinkle blue cheese on top. Place back in oven with the broiler on for 2 minutes.



Step 10
Take pizza out and let cool for 4-5 mins. Once cool, slice and enjoy!

  1. homemade pizza is such a chore...the dough i mean. like, enough stretching already, i just wanna eat the damn thing!! but this looks really delicious. i love a more sophisticated 'za. ya know, one topped with things like leeks and caramelized onions and what-have-you. can you do a superbowl menu post?? like, how to appeal to guys but keep it ladylike too??

    1. oh i know, the dough is a pain at first, but once you do it a few times (we make pizzas like 2x a month) you can get the hang of it! and yes i can def do a super bowl menu post- great idea!
