New Salad Recipes to Try
In the past, one of the main reasons why I've had trouble sticking with my healthy eating habits is boredom/lack of options. I was so bored eating the same salad every night. Now, thanks to the internet, there are so many delicious options out there! I wanted to share some new (to me) salad recipes that we've tried recently.
Modifications
- Used only 1/4 cup mayo and 1 tbsp olive oil in dressing
- Replaced olive oil with cooking spray when roasting chickpeas
Modifications:
- I needed more dressing so adjusted the dressing by 1.5
- Nixed the nuts
Rating = 8/10
Modifications:
- I cut the cabbage and carrot amounts in half bc holy cow that was a lot for just two people
- I nixed the avocado
- I used regular sesame seeds instead of black - I know, the shame!
Rating = 7/10
Kale and Shaved Brussels Sprouts Salad

- I only used 1 head of kale and that made enough for leftovers
- Nixed the nuts
- Used shaved parmesan instead of pecorino
Rating = 9/10
- I have not tried this one yet but DANG IT LOOKS GOOD!

ReplyDeleteAny Costco shoppers--in cold walk in area grab a bag of there Kale Brussel Sprout mix..ditch the dressing and make your own. It is so good and healthy. Pick up one of there incredible Rotisserie chickens and you have lunch all week!
