New Healthy (AND Filling) Recipes
Not to be dramatic, I have been STARVING. I kept referring to myself as 'the hungry hippo' because I felt like I was always hungry. That can be a trade-off sometimes right? Well after a few too many frustrating days, I scoured the internet for new filling, healthy recipes. Boy did I find some great options. In the event that any of you are deal with the same thing, here are my favorites (spoiler alert, 90% of them are from Skinnytaste):
BREAKFAST
Mixed Berry Muffins - Similar to a recipe of my mother's that I make, I love having a muffin with hard-boiled eggs for breakfast. |
SNACKS
Coconut Mango Chia Pudding - I know I am late to the party on chia seeds. This weekend, I stopped by one of my favorite juice shops for a treat after spin class and got a sample of their chia pudding after seeing someone buy it. It was incredible, I bought some and then proceeded to make it a couple of days later bc I couldn't get it out of my mind. This version is probably a lot healthier but just as yummy! |
Zucchini Tots - Like I said, I felt like I was still hungry after my meals so I looked for something healthy to either add as a side, or have as a snack. These tots did just the trick! They are easy to make in big batches and oh-so-yummy. |
Cauliflower Fritters - Another great addition to any meal or snack, these fritters are the bomb.com. I feel like I'm cheating when I eat them because they are SO GOOD. |
LUNCH/DINNER
Greek Couscous - Holy eff this is amazing. I made it last night and I cannot wait to have the leftovers for lunch. It's really easy to make (just involves a some chopping) and tastes divine. |
Lavash Pizza - This has quickly become a household favorite! The lavash we buy comes with three sheets so I've tried a few versions. Mushroom, olive and sun-dried tomato pizza and a white pizza with just mushrooms, garlic, truffle and cheese. YUM! |
Three Cheese Tortellini Mushroom Soup - I always wondered why people made soup when it was so easy to buy, then, on a blustery day, I decided to try this soup recipe. OMG my mind was blown. It was incredibly delicious and made a ton of leftovers, which I love. |
