Super Bowl Sunday Menu
Via |
While I'm not exactly a huge football fan, I am in advertising so the Super Bowl commercials are a big deal. As a result, I wanted something easy, casual, and customizable. You know, not food I would have to be in the kitchen too long for so I could actually enjoy the ads. After running through a few ideas for a menu for eight, I offered up a mexican-themed menu. The carnitas tacos had sealed the deal. Check out my full menu after the jump!
Appetizers
I'll set up a few bowls of chips, dips and nachos on the coffee table so snacks are within reach at all times.

Baked Nachos (mine won't have chicken) |
In an effort to provide something for everyone I decided to do a "build your own" taco bar. It will have all the usual suspects like shredded lettuce, tomato, avocado, cheese, etc for people to chose from. With regard to the meat, we'll be using the slow cooker to make carnitas. We made pulled pork in the slow cooker last year and it was a big hit. It also yields a massive amount so we'll have extras if people want to class up their nachos.

Now onto the fun stuff- drinks. We'll have beer and pitchers of Skinny Girl margaritas on hand. And the tequila will be at the ready too in case someone loses a bet ;).
