Guest Post - Healthy Breakfast Ideas by Heather of Pineapples and Pearls
Hi! I’m Heather from Pineapples and Pearls and I’m so
excited to be guest posting for Julia while she jet sets over to Italy for a
fabulous vacation!
Both Julia and I have talked about eating healthy on our
blogs so I put together a post for you today on healthy breakfasts. We all know
that eating breakfast sets the tone for eating right throughout the day, but it
can be so hard to get motivated in the morning! Having a few go-to recipes on
hand is the best way to make sure that you get in a nutritious and yummy
breakfast. These are three of my favorite recipes – one for those mornings
where you wake up early and have 25 extra minutes to cook and eat, one for
mornings where you only have 20 minutes start to finish, and one for the days
where you may have hit snooze a few too many times and need to eat in just 10
minutes (or at your desk!)
If you have 25 minutes, try an Avocado Egg Boat. Slice an
avocado in half and scoop out just enough so that you can fit an egg inside.
Bake at 425 degrees for 15 minutes and sprinkle with feta and pepper when it
comes out of the oven.
If you have 20 minutes, make an Open Face Egg and Spinach
sandwich. Sauté spinach and roasted red peppers for just a couple minutes while
you toast a piece of multi-grain bread. Cover the toast with the sautéed spinach
and peppers and sprinkle with parmesan. Cook an egg over easy and top the
sandwich with the egg and some ground pepper.
If you only have 5 minutes, throw together a Yogurt and
Granola parfait. This one is so easy to make and easy to eat on the go. Layer
greek yogurt, granola, and fresh berries. Done.
I hope these give you some ideas for making sure you are
able to squeeze in a healthy breakfast each and every morning. There’s no
better way to make sure you start your day on the right foot – and that’s
something we’re all trying to do now that summer is just around the corner!
