Fall Recipe Roundup

Butternut Squash Quinoa with Kale, Cranberries, Walnuts and Goat Cheese
I ended up roasting the butternut squash, instead of sauteing it, to save time.

 
November is upon us and it's finally starting to feel like fall in SF. I've been getting into the fall spirit in my wardrobe, so it only makes sense that my meal prep would follow suit. Since my last recipe roundup, I've tried out several new fall recipes and have a few favorites to share with you. I've collected these on my Yummy Food board on Pinterest which you can follow for a stream of steady recipes :)


Spinach Pesto Quinoa Bowl - I made my own pesto for this using this recipe. The recipe makes more pesto than you'll need (careful not to overdo it like I did the first time) so you'll have extras you can freeze or use for another yummy recipe.

Little Gem, Kale and Farro Salad - I modified this recipe using this dressing with homemade mayo.

Autumn Couscous Salad - I was kind of weirded out by the inclusion of apple juice but it ended up being super yummy!

Roasted Maple Acorn Squash Kale Salad - This was my first time cooking up acorn squash and boy was it delicious. I used this dressing recipe with homemade mayo.
