I ended up roasting the butternut squash, instead of sauteing it, to save time.
November is upon us and it's finally starting to feel like fall in SF. I've been getting into the fall spirit in my wardrobe, so it only makes sense that my meal prep would follow suit. Since my last recipe roundup, I've tried out several new fall recipes and have a few favorites to share with you. |Spinach Pesto Quinoa Bowl - I made my own pesto for this using this recipe. The recipe makes more pesto than you'll need (careful not to overdo it like I did the first time) so you'll have extras you can freeze or use for another yummy recipe.|
